Artichoke Soup

  • 1 lemon
  • 3/4 kilos artichoke, fresh or canned
  • 1 cup onion, chopped
  • 1 tablespoon garlic
  • 3 tablespoons unsalted butter
  • 1 tablespoon salt
  • 1/2 cups white wine
  • 4 cups chicken broth
  • 1 cup cream

  • Put the lemon juice in a container; this is where the peeled artichokes will be placed before using them for the soup, this prevents them from turning dark.
  • Clean the artichokes with a knife, first removing the leaves and then the fuzz from the inside.
  • Cut the artichoke hearts into 8 pieces in the lemon juice.
  • In a large pot, pour in the butter, onion, garlic, and artichokes until the artichokes are golden and tender (about 10 minutes).
  • Add the wine and let it boil until it reduces by half (about 3 minutes).
  • Add the chicken broth and cover to cook the artichoke for 20 to 25 minutes.
  • Pour the soup into a blender and blend until smooth.
  • Return the soup to the pot and add the cream and salt and pepper to taste.
