Asian Chicken Broth

A rich chicken broth with an Asian touch thanks to ginger and soy sauce.

  • 3 cups chicken broth
  • 3 cups water
  • 250 grams chicken breast, unraveled
  • 2 chives, chopped
  • 2 cloves garlic
  • 1 slice fresh ginger
  • 3 tablespoons fresh cilantro, chopped
  • 1 tablespoon soy sauce
  • 4 shiitake mushrooms, or mushrooms
  • 1/2 tablespoons toasted sesame seeds

  • In a large pot over medium heat, heat the water, chicken broth and chicken.
  • Add the chives, garlic, ginger, and coriander. Cover and cook for 20 minutes.
  • Add the mushrooms, soy sauce and cook over low heat for 10 more minutes.
  • Serve the soup in individual soup plates.
