Asparagus Soup with Apple, Pear, and Chayote

Delicious soup packed with fiber and vitamins, ideal for those who don't want to eat vegetables; they will love it.

  • 1 jar asparagus, green or white
  • 1 bunch apple, peeled and seedless
  • 1 pear, large, peeled, and seedless
  • 1 chayote, peeled and seedless
  • 1 zucchini, long and large
  • 1/4 white onions
  • 1 clove garlic
  • 1 clove
  • 1 star anise pod
  • 4 cups water
  • 2 cups cow's milk
  • 1 teaspoon chicken bullion
  • 2 pinches fresh parsley, or dry
  • salt, to taste
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon brown sugar
  • 2 cups panela cheese, or Oaxaca

  • In a pot, place the 4 cups of water, apple, pear, chayote, zucchini, star anise, clove, and sugar.
  • Everything is placed on the heat, and when it starts to boil, reduce the flame and cook for 10 to 15 minutes or until the vegetables are tender.
  • Remove the clove and star anise, place the vegetables and fruits in the blender along with the cooking broth, add the garlic (which we previously cut in half and removed the center, a long green stem, to avoid poor digestion). Add the remaining ingredients and blend.
  • The mixture should be smooth, with a silky appearance and no lumps.
  • Place a pot on the heat and add the blended mixture, stir to combine everything, and wait for it to boil before removing from heat and serving hot.
  • Remember that the preparation includes milk, and when boiling, it may spill, so do not neglect the pot to avoid accidents.
