Asparagus Soup with Potato

  • 2 cups potato, peeled and diced
  • 2 stems celery, chopped
  • 1/2 cups onion, chopped
  • 450 grams asparagus, fresh and sliced
  • 4 cups water
  • 2 tablespoons vegetable butter
  • 1/2 cups whole-wheat flour
  • 1 1/2 cups low-fat milk
  • lime zest, to taste
  • salt

  • Heat the asparagus, onion, potatoes, celery, and water over high heat; wait until it boils and then reduce to a simmer, cooking until the vegetables are tender and add the butter.
  • Whisk the flour and milk, add the mixture to a pot while stirring regularly.
  • Increase the heat to medium-high and continue stirring until the soup has a thick consistency.
  • Season with lemon zest, salt, and pepper.
