Asparagus is a source of fiber and antioxidants that we can not stop consuming in our daily lives. This soup is excellent for people suffering from diabetes because it takes care of the amount of carbohydrates it contains.

Ingredients

6 portions
  • 2 cups potato, peeled and cut into cubes
  • 2 stems celery, chopped
  • 1/2 cups onion, chopped
  • 450 grams asparagus, fresh and cut
  • 4 cups Water
  • 2 tablespoons vegetable butter
  • 1/2 cups whole wheat flour
  • 1 1/2 cups skim milk
  • lemon zest, to taste
  • salt
  • black pepper

Preparation

Heat the asparagus, onion, potatoes, celery and water on high heat, wait until it reaches a boil and change to a simmer, cook until the vegetables are tender and add the butter.
Beat the flour and milk, add the mixture to a pot stirring recurrently.
Raise the heat to medium-high and continue stirring until the soup has a thick consistency.
Season with lemon zest, salt, pepper.

PRESENTATION

Preferably heat the dishes and add the soup, you can also add chives on top of the soup.

con un toquecito de Chile chipotle quedara mas buena el esparrago es la única verdura que cuando uno suda dura asta 3 días el olor del esparrago que te sale por el sudor
