Aztec Soup or Tortilla Soup

  • 12 corn tortillas
  • 4 tomatoes
  • 1/2 onions
  • 1 clove garlic
  • 4 pasilla chiles
  • 2 liters chicken broth
  • 1 sprig parsley
  • 1 sprig epazote
  • 2 avocados, cut into cubes
  • 1 cup double cream cheese
  • salt and pepper
  • lime juice

  • Cut the tortillas into thin strips and fry them until they are lightly golden, then drain on paper towels. Set aside.
  • Remove the seeds from the chili and cut it into thin strips, fry it (optional).
  • In a pan with a splash of oil, add the tomatoes, garlic, and onion, and sauté for a few minutes.
  • Blend the tomatoes, onion, and garlic with one liter of broth.
  • In a pot, pour in the mixture and add the rest of the broth, the sprigs of epazote, and parsley. Season with salt and pepper.
  • Serve by placing a layer of tortilla, then the broth, the chili, avocado, cream, cheese, and a splash of lime.
