Barley and Meat Soup

  • 300 grams veal
  • 100 grams carrot
  • 100 grams turnip
  • 1 leek
  • 1 onion
  • 150 grams celery
  • 100 grams barley, perlad
  • 1/4 cups tomato purée
  • 25 grams butter
  • 1 sprig parsley

  • Cut the meat into cubes and boil with 2 liters of water, seasoning with salt and pepper. Add the barley and cook everything for 2 hours.
  • Cut the vegetables into small equal cubes, sauté them with butter, add the tomato purée, and incorporate it into the stew at the end of the cooking time.
