  • vegetable oil
  • 1 clove garlic
  • 1/4 onions, in pieces
  • 2 guajillo chiles
  • 3 cups black beans, whole, brothy
  • 2 cups vegetable broth
  • salt and pepper
  • 1 sprig epazote
  • tortillas, fried, in thin strips
  • sour cream
  • panela cheese
  • avocado

  • Sauté the garlic clove, onion, and guajillo chiles in a pot with a little oil for 3 minutes or until all ingredients are golden. Add the beans and cook for 7 minutes or until they start to boil.
  • Blend the beans with the sauté and vegetable broth. Pour the soup into a pot and add the epazote. Cook for 10 minutes or until it starts to boil.
  • Serve the bean cream in a bowl and garnish with tortillas, cream, cheese, and avocado.
