Bean Soup with Cactus and Carrot

  • 3 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 2 guajillo chiles, soaked and deveined
  • 1 cup water
  • 1 tablespoon Knorr® vegetable bouillon
  • 2 tablespoons olive oil
  • 2 tablespoons onion, finely chopped
  • 2 cups fava beans, green, cleaned, and blanched
  • 1 cup carrot, cut into cubes
  • 1 cup nopal, cooked and cut into strips
  • 2 árbol chiles
  • epazote
  • tortillas, to accompany
  • limes, to accompany

  • On a griddle, roast the tomatoes, onion, and garlic.
  • Blend the tomatoes with the onion, garlic, guajillo chili, water, and Knorr® Vegetable Broth. Set aside.
  • Heat the oil in a skillet over medium heat, sauté the onion, add the beans, carrot, cactus, árbol chiles, tomato sauce, epazote, and cook for 15 minutes.
  • Serve in a deep plate and accompany with tortillas and lime.
