Beet and Ginger Soup

  • 1/4 sticks butter
  • 1 kilo beet, peeled and diced
  • 1 onion, chopped
  • 1 potato, peeled and chopped
  • 6 cups chicken bullion
  • 1 1/2 tablespoons fresh ginger, finely chopped
  • 1/4 cups whipping cream

  • Melt the butter, add the beet, onion, and potato. Sauté for about 10 minutes.
  • Add the broth and ginger, cover, and let simmer on low heat until the vegetables are tender.
  • Blend the vegetables in a blender until pureed. Season with salt and pepper.
