1/4 sticks butter
1 kilo beet, peeled and diced
1 onion, chopped
1 potato, peeled and chopped
6 cups chicken bullion
1 1/2 tablespoons fresh ginger, finely chopped
1/4 cups whipping cream

Melt the butter, add the beet, onion, and potato. Sauté for about 10 minutes.
Add the broth and ginger, cover, and let simmer on low heat until the vegetables are tender.
Blend the vegetables in a blender until pureed. Season with salt and pepper.
Serve with sour cream and chopped parsley.
