Wash and remove any dirt that may be attached, boil the beets with the onion in salted water.
Remove when tender (reserve the cooking water), peel and blend with some of the cooking water and the onion, pour everything together with the rest of the broth where they were cooked.
Add lemon juice, sugar, and season with salt and pepper to taste, mix, and heat.
Serve hot or cold with a tablespoon of sour cream, delicious.
