Bicolor Tortilla Soup

  • 1/2 cups vegetable oil
  • 5 corn tortillas, Yellows
  • 5 corn tortillas, Blues
  • 1 cup panela cheese, in medium cubes
  • 1 cup pork rinds, chopped
  • 1 avocado, cut into medium cubes
  • 3 guajillo chiles, cut into strips, fried
  • 2 cans broth, for tortilla soup Campbell's ®

  • Cut the tortillas into thin strips. Heat the oil in a medium skillet over medium heat and fry the tortilla strips until golden for 5 minutes. Remove from the oil and drain to remove excess oil.
  • Heat in a medium saucepan the tortilla soup broth plus one can of water over medium heat until it boils for 10 minutes, then remove from heat.
  • Serve in a deep plate, a little bit of fried tortillas, panela cheese, chicharrón, avocado, and fried guajillo chili. Finish by filling with very hot tortilla soup broth.
