Black Bean Soup with Chipotle Chile

A delicious black bean soup with chipotle chile accompanied by cream and fresh cilantro, served with Milpa Real tortilla chips.

  • 1 drizzle olive oil
  • 1 stick onion, finely chopped
  • 1 stick red bell pepper, seedless and chopped
  • 2 dash garlic, chopped
  • 1 drizzle cumin, powdered
  • 1 drizzle oregano, powdered
  • 4 glasses chicken broth
  • 2 drizzle chipotle chile, chopped
  • 1/2 glasses tomato, fresh chopped
  • 1 drizzle fresh cilantro, fresh chopped
  • 1/2 glasses sour cream
  • 1/4 drizzle salt
  • totopo Milpa Real
  • 1 cup pinto bean, previously cooked

  • Heat oil in a large pot and cook the onion and peppers until golden, about 10 minutes.
  • Add the garlic, cumin, and oregano and cook for 1 more minute.
  • Add the broth, beans, and chile and cook until it starts to boil. Lower the heat and cook for 20 minutes. Remove from heat.
  • Blend half of the soup and return to the pot. Heat again and serve.
