Broccoli Soup with Blue Cheese and Croutons

Excellent mix of flavors that will impress at any light and elegant dinner.

  • 350 grams broccoli
  • 400 milliliters vegetable broth
  • 25 grams butter
  • 4 green onions
  • 50 grams blue cheese
  • 100 milliliters double cream
  • 1 pinch pepper
  • 1 pinch salt
  • nutmegs
  • pieces of bread, in croutons (optional)

  • Slice the broccoli and place it in a saucepan. Pour the vegetable broth over it and let it rest.
  • Melt the butter in a hot skillet and cook the green onions for about 4 minutes.
  • Add to a food processor or blender with the blue cheese and blend until creamy.
  • Cook the entire mixture in a pot and season with salt and pepper.
