  • 2 teaspoons olive oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups celery, finely chopped
  • 1/2 cups green bell pepper, cut into small-sized cubes
  • 1/2 cups carrot, cut into small-sized cubes
  • 2 cups cabbage, shredded
  • 1/2 cups tomato, cut into small-sized cubes
  • 1 cup button mushrooms, thinly sliced
  • 8 cups chicken broth, fat skimmed off
  • pinches salt and pepper
  • fresh cilantro, for garnish

  • In a pot, heat oil over medium heat. Cook onion, garlic, celery, green bell pepper, carrots, and cabbage. Cook for 5 minutes.
  • Add tomatoes and button mushrooms and cook for a few minutes. Pour chicken broth into the pot. Season with salt and pepper. Cook for 30 minutes over medium heat.
  • Serve healthy cabbage soup in a soup bowl and garnish with cilantro.
