  • 2 teaspoons olive oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups celery, finely chopped
  • 1/2 cups green bell pepper, cut into cubes
  • 1/2 cups carrot, cut into cubes
  • 2 cups cabbage, cut into strips
  • 1/2 cups tomato, cut into cubes
  • 1 cup button mushrooms, sliced
  • 8 cups chicken broth, trimmed
  • pinches salt and pepper
  • fresh cilantro, for garnish

  • Heat a pot over medium heat with the oil, cook the onion, garlic, celery, green pepper, carrot, and cabbage. Cook for 5 minutes.
