10 carrots, cut and scraped
1 1/2 tablespoons sugar
2 cups water
3 tablespoons whole-wheat flour
1 pinch nutmeg powder
pinches salt
pepper
4 cups low-fat milk
6 sprigs fresh parsley

Put water in a saucepan, add the carrot and sugar, cover the saucepan and simmer (20 minutes).
Drain the carrots leaving a little liquid in them.
In another saucepan, mix salt, pepper, wholemeal flour, milk and nutmeg. Cook and stir until the sauce is thick.
Blend the carrot with the sauce, add the liquid that was left of the carrots.
