Carrot soup

This soup is for the whole family. The portions of its ingredients are made so that people with diabetes can consume it without restrictions.

  • 10 carrots, cut and scraped
  • 1 1/2 tablespoons sugar
  • 2 cups water
  • 3 tablespoons whole-wheat flour
  • 1 pinch nutmeg powder
  • pinches salt
  • pepper
  • 4 cups low-fat milk
  • 6 sprigs fresh parsley

  • Put water in a saucepan, add the carrot and sugar, cover the saucepan and simmer (20 minutes).
  • Drain the carrots leaving a little liquid in them.
  • In another saucepan, mix salt, pepper, wholemeal flour, milk and nutmeg. Cook and stir until the sauce is thick.
  • Blend the carrot with the sauce, add the liquid that was left of the carrots.
