Cauliflower Cream

  • 300 grams cauliflower
  • 120 grams leek, (white part)
  • 1 1/2 liters cow's milk
  • 40 grams butter
  • 40 grams flour
  • 150 milliliters sour cream
  • 2 egg yolks

  • Put the butter in a pot over low heat and let it melt before gradually adding the flour, incorporating it.
  • Add the cream to the mixture. Be careful not to overheat the sauce so it doesn't darken.
  • Cook the cauliflower in salted water.
  • Blend the soup with the cream mixture and add the egg yolks.
