Ingredients

8 portions
  • 300 grams cauliflower
  • 120 grams leek, (white part)
  • 1 1/2 liters milk
  • 40 grams butter
  • 40 grams flour
  • 150 milliliters cream
  • 2 egg yolks

Preparation

Put the butter in a pot over low heat and let it melt to start adding the flour little by little incorporating them.
Add the cream to the mixture. Be careful not to over heat the sauce so that it does not darken.
Cook the cauliflower in salted water.
Blend the soup with the cream mixture and add the egg yolks.
