Celery Cream with White Wine

This celery cream is delicious, it’s a hit in my family.

  • 3 cups celery
  • 1/4 sticks butter
  • 1 cup onion, chopped
  • 1/4 cups green onion
  • 6 cups chicken broth
  • 1/2 teaspoons thyme
  • 1/2 cups dry white wine
  • 1 cup whipping cream
  • 1 tablespoon parsley

  • Peel the celery if necessary and chop it including some leaves. Chop the spring onions and the green parts as well.
  • Melt the butter and sauté the celery, onion, and spring onions for 10 minutes. Add the broth, thyme, salt, and pepper. Cover the pot and let it cook on low heat for 40 minutes.
  • Once the vegetables are soft, blend them very well in a blender, strain through a chinois or sieve, and return it to the pot. Add the white wine and cook for 4 more minutes. Add the cream and as soon as it starts to boil, serve immediately.
