Ingredients: 3 cups celery; 1/4 sticks butter; 1 cup onion, chopped; 1/4 cups green onion; 6 cups chicken broth; 1/2 teaspoons thyme; 1/2 cups dry white wine; 1 cup whipping cream; 1 tablespoon parsley

Peel the celery if necessary and chop it including some leaves. Chop the spring onions and the green parts as well. Melt the butter and sauté the celery, onion, and spring onions for 10 minutes. Add the broth, thyme, salt, and pepper. Cover the pot and let it cook on low heat for 40 minutes.
