Chicken Broth and Noodles with Lemon

A rich chicken broth soup with Chinese noodles. The soup has a lot of flavor thanks to the lemon, coriander, chili and ginger

  • 6 cups chicken broth, homemade or canned
  • 120 grams egg noodle, chinese
  • 1 lime, juice and zest of the peel
  • 1/4 cups fresh cilantro, chopped
  • 1 tablespoon fresh ginger, chopped
  • 1 serrano chile, seedless chopped
  • 1 chicken, without split skin

  • Combine the lemon zest, ginger and coriander in a small bowl. Add the lemon juice.
  • In a large pot over medium heat, heat the chicken broth to a boil. Add the lemon juice mixture, noodles, chili, and chicken. Cover the pot and cook over medium heat for 3 minutes or until the noodles are cooked.
  • Season with salt and pepper and cook.
