Combine the lemon zest, ginger and coriander in a small bowl. Add the lemon juice.
In a large pot over medium heat, heat the chicken broth to a boil. Add the lemon juice mixture, noodles, chili, and chicken. Cover the pot and cook over medium heat for 3 minutes or until the noodles are cooked.
Season with salt and pepper and cook.
