  • 2 liters water
  • 1 chicken breast, with bone and skinless
  • 1 clove garlic
  • 2 leaves bay
  • salt
  • 1 cauliflower, cut into small pieces
  • 2 chayotes, peeled and diced
  • 2 pumpkins, diced
  • 2 serrano chiles, finely chopped
  • avocado, sliced, for serving
  • fresh cilantro, finely chopped, for serving
  • lime, for serving

  • For the broth, in a pot heat the water and cook the chicken breast with garlic, bay leaf, and salt. Cover and boil until the breast is cooked, about 40 minutes.
  • Remove the chicken breast, cool, and shred. Strain the chicken broth to remove impurities and fat.
  • Grind the cauliflower in a food processor until you get very small pieces with a rice consistency.
  • Return the broth to a simmer covered, once it starts to boil, add the chayotes and cook for a few minutes without uncovering the pot. Add the zucchini and serrano pepper, cook until tender. Once the vegetables are cooked, incorporate the cauliflower and chicken, cook for 5 more minutes and season.
  • Serve the chicken broth with avocado, cilantro, and a few drops of lime.
