  • 3 liters water
  • 1 chicken breast, with bone and skin
  • 1/2 onions
  • 1 clove garlic
  • 3 leaves bay
  • 1 pinch salt
  • 2 ears corn, cut into 4
  • 2 carrots, peeled and cut into medium cubes
  • 2 zucchinis, cut into large cubes
  • 1 potato, cut into medium cubes
  • 1 celery, chopped
  • 1/4 bunches fresh cilantro
  • 1 serrano chile, in slices, for serving
  • 1 cup white rice, cooked for serving
  • lime, cut in half, for serving

  • Heat a pot over high heat with water and add the chicken breast, white onion, garlic, bay leaves, and salt. Cook until the chicken is fully cooked. Skim the broth to remove impurities and make it clear.
  • Remove the chicken breast, take off the skin and shred it. Set aside.
  • Strain the broth to remove the fat.
  • Heat a small pot with the degreased chicken broth, add the vegetables in order of cooking, starting with the corn, carrot, potato, zucchini, celery, and cilantro. Cook until you have crunchy vegetables.
  • Serve the broth with white rice and shredded chicken, accompanied by slices of serrano chili to taste and a few drops of lemon. Enjoy.
