Chicken Broth with Cornstarch

  • 2 tablespoons vegetable oil
  • 1 kilo chicken, in pieces
  • 1 onion, chopped in cubes
  • 3 tomatillos, in cubes
  • 2 carrots, in cubes
  • 3 cloves garlic, chopped
  • 1 cup corn kernels
  • 4 tablespoons cornstarch
  • 4 cups water
  • salt and pepper

  • In a saucepan, heat the oil over medium heat and brown the chicken. Add the onion, garlic, and sauté until golden.
  • Once the chicken is browned, add the tomatoes, carrots, and corn.
  • Add 3 cups of water, salt, pepper, and cook for 25 minutes or until the carrot is tender and the chicken is cooked.
  • Dissolve the cornstarch in the remaining water and pour it into the soup. Mix gently for 3 minutes until it thickens.
