1 kilo chicken, in pieces
1 onion, chopped in cubes
3 tomatillos, in cubes
2 carrots, in cubes
3 cloves garlic, chopped
1 cup corn kernels
4 tablespoons cornstarch
4 cups water
salt and pepper

In a saucepan, heat the oil over medium heat and brown the chicken. Add the onion, garlic, and sauté until golden.
Once the chicken is browned, add the tomatoes, carrots, and corn.
Add 3 cups of water, salt, pepper, and cook for 25 minutes or until the carrot is tender and the chicken is cooked.
Dissolve the cornstarch in the remaining water and pour it into the soup. Mix gently for 3 minutes until it thickens.
