Chicken Soup with Nopales

This soup is a new way to include nopales in your meals, with a recipe rich in flavors, nutrients, and very practical to prepare.   • 6 tomatoes, grilled and skinless
  • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 1/2 cups chipotle chile
  • 2 cups chicken broth
  • 1 chicken breast, cooked and shredded
  • 1 corsage herb bundle
  • salt
  • 3 cups nopal, sliced
  • epazote
  • salt
  • pepper
  • Manchego cheese, grated
  • epazote, for garnish
  • tortillas, to accompany

  • Blend the tomato, onion, garlic, chipotle chili, and 2 cups of chicken broth.
  • In a pot, cook the blended mixture over medium heat and add more chicken broth if necessary; it will all depend on the texture you want for the soup; add the nopales and the shredded chicken you cooked, a bit of epazote, and season with salt and pepper; cook for 10 minutes.
  • Serve the soup, add manchego cheese, garnish with epazote, and serve with tortillas.
