Blend the tomato, onion, garlic, chipotle chili, and 2 cups of chicken broth. In a pot, cook the blended mixture over medium heat and add more chicken broth if necessary; it will all depend on the texture you want for the soup; add the nopales and the shredded chicken you cooked, a bit of epazote, and season with salt and pepper; cook for 10 minutes.
