Heat the olive oil in a pot and fry the onion, garlic, and jalapeño for 5 minutes over medium heat. Add the chicken broth and cook for 15 minutes.
Blend the onion, garlic, chili, chicken broth, cilantro, Oikos® Greek Yogurt Protein, and cream cheese. Season with salt and pepper. Set aside.
On a cutting board, slice the tortillas into thin strips and place them on a baking sheet lined with wax paper. Spray with olive oil spray and bake at 180 °C for 15 minutes. Let cool.
Serve in a deep plate and garnish with the baked tortilla, cotija cheese, and cilantro leaves.
