Cilantro Cream with Jalapeño

  • 2 tablespoons olive oil
  • 1/4 onions
  • 1 Jalapeño chile, in quarters
  • 1 clove garlic
  • 2 cups cilantro
  • 2 cups chicken broth
  • 1 cup Oikos® Protein Greek Yogurt
  • 1 cup cream cheese, low in fat
  • 10 tortillas
  • olive oil spray
  • 1 cup Cotija cheese, crumbled, for garnish
  • cilantro leaves, for garnish

  • Heat the olive oil in a pot and fry the onion, garlic, and jalapeño for 5 minutes over medium heat. Add the chicken broth and cook for 15 minutes.
  • Blend the onion, garlic, chili, chicken broth, cilantro, Oikos® Greek Yogurt Protein, and cream cheese. Season with salt and pepper. Set aside.
  • On a cutting board, slice the tortillas into thin strips and place them on a baking sheet lined with wax paper. Spray with olive oil spray and bake at 180 °C for 15 minutes. Let cool.
  • Serve in a deep plate and garnish with the baked tortilla, cotija cheese, and cilantro leaves.
