1 1/2 kilos chicken
3 carrots, cut into chunks
1 yellow onion, cut into chunks
2 stems celery, cut into chunks
pepper
5 sprigs parsley
1 liter water

Preheat the oven to 230ºC.
Put the carrot, onion and celery in a pan, grill them until golden brown
In a bowl with water, add the vegetables and also add the pepper and parsley
When it comes to a boil, lower the heat and simmer for an hour and a half. Remove the foam that rises to the surface
With the help of a sieve strainer lined with paper towels or gauze, strain the broth. Let cool to room temperature
Let it rest for a day and remove the solidified fat from the surface.
