Classic Chicken Broth

This chicken broth is ideal for people with diabetes. We do not add fat other than that from the meat.

  • 1 1/2 kilos chicken
  • 3 carrots, cut into pieces
  • 1 yellow onion, cut into pieces
  • 2 stems celery, cut into pieces
  • pepper
  • 5 sprigs parsley
  • 1 liter water

  • Preheat the oven to 230ºC.
  • Put the carrot, onion, and celery in a pan, roast them until browned.
  • In a container with water, add the vegetables and also add pepper and parsley.
  • When it comes to a boil, reduce the heat and simmer for an hour and a half. Skim off the foam that rises to the surface.
  • Using a strainer lined with paper towel or cheesecloth, strain the broth. Let it cool to room temperature.
  • Let it rest for a day and remove the solidified fat from the surface.
