This chicken broth is ideal for people with diabetes. We do not add fat other than that from the meat.

1 1/2 kilos chicken
3 carrots, cut into pieces
1 yellow onion, cut into pieces
2 stems celery, cut into pieces
pepper
5 sprigs parsley
1 liter water

Preheat the oven to 230ºC.
Put the carrot, onion, and celery in a pan, roast them until browned.
In a container with water, add the vegetables and also add pepper and parsley.
When it comes to a boil, reduce the heat and simmer for an hour and a half. Skim off the foam that rises to the surface.
Using a strainer lined with paper towel or cheesecloth, strain the broth. Let it cool to room temperature.
Let it rest for a day and remove the solidified fat from the surface.
