Classic Chicken Broth

This chicken broth is ideal for people who have diabetes. We do not add fat other than that of meat.

  • 1 1/2 kilos chicken
  • 3 carrots, cut into chunks
  • 1 yellow onion, cut into chunks
  • 2 stems celery, cut into chunks
  • pepper
  • 5 sprigs parsley
  • 1 liter water

  • Preheat the oven to 230ºC.
  • Put the carrot, onion and celery in a pan, grill them until golden brown
  • In a bowl with water, add the vegetables and also add the pepper and parsley
  • When it comes to a boil, lower the heat and simmer for an hour and a half. Remove the foam that rises to the surface
  • With the help of a sieve strainer lined with paper towels or gauze, strain the broth. Let cool to room temperature
  • Let it rest for a day and remove the solidified fat from the surface.
