Preparation
Preheat the oven to 230ºC.
Put the carrot, onion and celery in a pan, roast until golden brown
In a bowl of water, add the vegetables and add the pepper and parsley
When it breaks into a boil, lower the flame and simmer for an hour and a half. Remove the foam that rises to the surface
With the help of a strainer sieve lined with paper towel or gauze, strain the broth. Allow to cool to room temperature
Leave it to rest for a day and remove the solidified fat from the surface.
