Cold Melon and Mint Soup

Prepare this rich cold melon soup that is the perfect choice for this summer. It has a touch of Greek yoghurt which makes it very creamy, and the refreshing taste of mint. Decorated with fresh melon pearls.

  • 1 melon
  • 1/3 cups Extra Special® natural greek style yogurt
  • 1/2 cups whipping cream
  • 1 teaspoon ginger, grated
  • 1/4 teaspoons nutmeg
  • 1 tablespoon peppermint
  • 1 pinch Great Value® plain salt
  • 4 skewers, of melon pearls
  • 4 slices Extra Special® iberian ham

  • Blend the melon with the yoghurt, the whipping cream, the ginger, the nutmeg and the salt.
  • Refrigerate the soup before serving about 1 hour.
  • Serve and decorate with skewers of melon and chopped serrano ham.
