Prepare this rich cold melon soup that is the perfect choice for this summer. It has a touch of Greek yoghurt which makes it very creamy, and the refreshing taste of mint. Decorated with fresh melon pearls.

Ingredients

4 portions
  • 1 cantaloupe
  • 1/3 cups Yogurt Extra Special® natural Greek style
  • 1/2 cups whipping cream
  • 1 teaspoon ginger, grated
  • 1/4 teaspoons nutmeg
  • 1 tablespoon peppermint
  • 1 pinch Salt Great Value®
  • 4 skewer, of melon pearls
  • 4 slices Extra Special® Iberian ham

Preparation

Blend the melon with the yoghurt, the whipping cream, the ginger, the nutmeg and the salt.
Refrigerate the soup before serving about 1 hour.
Serve and decorate with skewers of melon and chopped serrano ham.
