Cold Melon Soup

Although it sounds untraditional, this cold melon soup can be a delicious dish to start a meal or as a dessert.

  • 3 melons, mature
  • 2 tablespoons honey
  • 1/4 cups lime juice
  • 1/2 cups orange juice
  • 1/4 cups port wine

  • Cut the melons and remove the seeds. Empty the pulp.
  • Cut into pieces the melon pulp and pass it through a food processor. Add the honey, the lemon juice, the orange juice and the port. Process until a homogeneous mixture remains.
  • Refrigerate at least 1 hour.
