This cold pasta with spicy vegetables flavored with Chilito La Botanera® will save you in a pinch; it’s very easy to prepare and yields a lot. Its creaminess and spicy flavor will make you unable to stop eating it. Ideal as a side dish or for a meatless Monday.
In a deep pot, heat the water over high heat until it reaches a boil. Add the salt and, when it returns to a boil, pour in and cook the pasta for 12 minutes. Drain, cool, and set aside.
In a bowl, mix the pasta with the vegetables, cream, mayonnaise, salt, pepper, chipotle, and Chilito La Botanera® until all ingredients are combined.
Serve and top with parmesan cheese.
