Cold Pasta Salad with Spicy Vegetables

This cold pasta with spicy vegetables with the flavor of Chilito La Botanera® will get you out of trouble, it is very easy to prepare and yields. Its creaminess and spicy flavor will make you can't stop eating it. Ideal as a garnish or for a meatless Monday.

  • 5 liters water
  • salt
  • 500 grams fusilli pasta, screw
  • 1 cup broccoli, bleached
  • 1 cup cherry tomato, in halves
  • 1 cup carrot, bleached
  • 1 cup yellow bell pepper
  • 1 cup sour cream
  • 1/2 cups mayonnaise
  • salt
  • pepper
  • 1/2 cups chipotle chile, ground
  • 1/8 cups La Botanera® Chilito chile powder
  • Parmesan cheese, To accompany

  • Heat the water in a deep pot over high heat until it comes to a boil. Add the salt and when it comes to a boil, pour and cook the pasta for 12 minutes. Drain, cool and reserve.
  • In a bowl, mix the pasta with the vegetables, the cream, the mayonnaise, the salt, the pepper, the chipotle and Chilito La Botanera® until all the ingredients are integrated.
  • Serve and accompany with Parmesan cheese.
