2 cups watermelon, boneless, diced
2 tomatoes, large
2 tablespoons unsalted almonds, ground
1 clove garlic
1 tablespoon lime juice
1 tablespoon red wine
1 tablespoon olive oil
2 tablespoons feta cheese, crumbled
2 tablespoons peppermint, chopped

In a blender, mix the watermelon, tomato, almond, garlic, lemon juice, vinegar, and oil until you achieve a smooth consistency.
Strain the soup through a fine mesh strainer and place in the bowls for serving.
Add the feta cheese and fresh mint to each bowl and serve.
