Cream of Huitlacoche with Yoghurt FAGE Total 0%

  • 1 cup FAGE® Total 0% greek style yogurt
  • 45 grams butter
  • 1/4 onions, chopped
  • 1/2 carrots, finely chopped
  • 1 stem celery, finely chopped
  • 500 grams huitlacoche
  • 1 cup chicken broth
  • salt
  • pepper

  • In a pot, melt the butter and add the onion, celery, and carrot. Stir occasionally until they are soft.
  • Add the huitlacoche and let it fry a little.
  • Cover with chicken broth and let it boil for 2 minutes.
  • Blend this mixture, add the yoghurt, and blend again.
  • Return to the pot and season with a little salt and pepper.
