Heat the butter in a pot, when melted add the flour, onion, garlic, and mushrooms. Cook over medium heat for 2 minutes.
Add the white wine and let it reduce by half, then add the chicken broth and cook for 2 minutes.
Blend together with the cream, season with salt and pepper, and return to a pot over medium heat for 2 minutes. Heat the butter in a pan and sauté the sliced mushrooms for decoration. Set aside.
Serve the cream of mushrooms in a bowl and decorate with more mushrooms and fresh thyme.
