Bean Cream with Yoghurt

  • 1 tablespoon olive oil
  • 1 shallot, chopped
  • 1 clove garlic, chopped
  • 1 Jalapeño chile, green, seeded, and chopped
  • 1 teaspoon cumin
  • 2 cups refried beans
  • 2 cups water
  • 1 cube chicken broth
  • lime juice, to taste
  • 1 cup FAGE® Total 0% greek style yogurt
  • 2 tablespoons fresh cilantro, chopped
  • 1 pinch salt
  • 1 pinch pepper

  • Heat a large pot over medium-high heat.
  • Add the oil and sweat the shallot for 1 minute.
  • Add the garlic, jalapeño, and cumin, and continue cooking for 1 minute.
  • Add the beans, chicken broth, and Greek Yoghurt FAGE Total 0% and reduce to a simmer.
  • Let simmer for 5 minutes and transfer the soup to a blender.
  • Blending in batches, puree the soup until smooth and return to a medium pot over medium heat.
  • Season the soup to taste with salt, pepper, and lime juice.
  • Serve and garnish with chopped cilantro.
