  • 3 green onions, chopped
  • 3 cups celery, chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 1 potato, cooked, in large cubes
  • salt and pepper
  • 4 cups vegetable broth
  • 1/2 cups evaporated milk
  • olive oil, for garnish
  • croutons, for garnish

  • Chop the green onion and celery into large pieces. Set aside.
  • Sauté the green onion, celery, garlic, and potatoes in a pot with a little oil for 5 minutes. Add salt, pepper, and vegetable broth, and cook for 5 more minutes.
  • Blend the broth with the vegetables and evaporated milk until obtaining a smooth consistency.
  • Pour the celery cream into a pot and cook for 5 more minutes. Adjust the seasoning.
  • Serve the celery cream and garnish with olive oil and croutons.
