Cream Delicia Sol

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup whipping cream
  • 1/2 onions, finely chopped into small cubes
  • 1 clove garlic, finely chopped
  • 1 1/2 carrots
  • 4 potatoes, large, cooked, peeled, and cut into cubes
  • 2 tablespoons flour
  • 1 liter cow's milk
  • salt, to taste
  • 1 pinch paprika
  • 1 pinch nutmeg

  • 1 tablespoon dry chicken broth or bouillon, (for the carrot cream)
  • 1/2 leeks, large finely chopped (for the carrot cream)

  • 3 carrots, large cooked, peeled, and chopped into cubes (for the carrot cream)
  • 100 milliliters cow's milk, or chicken broth (for the carrot cream)
  • 50 grams pine nuts, (for the carrot cream)
  • 50 walnuts, (for the carrot cream)
  • 1 tablespoon ground ginger, (for the carrot cream)

  • Procedure for leek and potato base soup Melt the butter in a pot and add the olive oil, sauté the onion and garlic for 2 minutes
  • Add 1 of the potatoes cut into cubes and half of the leek, let brown.
  • Add the flour and stir while the flour browns.
  • Blend the remaining 3 potatoes with the milk or broth and the other half of the chopped leek.
  • Add the blended mixture to the sauté and stir to avoid lumps
  • Stir slowly and season with salt, pepper, nutmeg, and paprika
  • Let cook for 5 – 7 minutes
  • Add the heavy cream and stir
  • Let cook for another 5 minutes. Set aside.
  • Procedure for the carrot cream. In the food processor, grind the carrot with the pine nuts, walnut, and grated ginger, set aside.
  • In a pot, melt the butter and add the olive oil, sauté the leek and garlic
  • Add the processed carrot.
  • Let sauté a little.
  • Add the milk or chicken broth. It may not be necessary to add the entire indicated amount; aim for a very thick cream.
  • Stir slowly and season with salt, pepper to taste. Set aside.
