Green Bean Cream with Almonds

  • 3 tablespoons butter
  • 1/4 onions
  • 1 clove garlic
  • 3 cups green beans
  • 1 1/2 cups almonds, sliced and toasted
  • 4 cups chicken broth
  • 2 cups sour cream
  • 2 tablespoons butter
  • 1 cup button mushrooms
  • salt
  • pepper
  • almonds, for garnish
  • chives, for garnish

  • Heat a pot and melt the butter, add the onion, garlic, green beans, and almonds; sauté for a few minutes; then add the chicken broth and cream; season with salt and pepper. Cook for 7 minutes.
  • Blend the above for 7 minutes and return to the pot; cook for 10 minutes and season with salt and pepper.
  • In a separate pan, cook the mushrooms in butter, season with salt, and sauté for 5 minutes. Set aside.
  • Serve the soup hot, garnished with mushrooms, green onions, and sliced almonds.
