Chop the spring onion with the stems, remember we want the green color and the flavor of the onion, pumpkin, and garlic cloves.
Heat your pot and add 2 tablespoons of butter and 1 of oil. Once the butter and oil are well combined, add the pumpkin and onion.
Cook the pumpkin and onion for 5 minutes, then add the peas with the garlic and cook for another 3 to 5 minutes.
Add the 2 cups of chicken broth, the mint, and let it boil for 5 to 10 minutes.
Set aside and let cool a bit.
Once the temperature is safe, blend everything well and pour it back into the pot.
Cook for another 10 minutes, adding the cream gradually until well mixed.
