Lettuce and Potato Cream

  • 4 tablespoons butter
  • 2 green onions, sliced
  • 1 clove garlic, chopped
  • 2 potatoes, cooked and diced
  • 3 packages lettuce, mini French Eva® (150 g each)
  • 4 cups cow's milk
  • 1/2 cups whipping cream
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 pinches nutmeg
  • 1 cup croutons, for garnish

  • In a small pot over low heat, melt the butter and cook the green onions until soft.
  • Add the garlic and potatoes and cook for 3 minutes. Add the lettuce leaves and cook for 5 minutes.
  • Blend the preparation with a little milk and return to the pot. Add the rest of the milk and the whipping cream and boil for 5 minutes or until it thickens.
  • Season with salt, pepper, and nutmeg.
