Potato and Corn Cream

Delicious potato and corn cream with a perfect texture. It also has a pleasant flavor due to ingredients with a lot of taste like bacon and cilantro; resulting in a soup you won't be able to resist.

  • 1 tablespoon vegetable oil
  • 100 grams bacon, chopped
  • 3 potatoes
  • 2 cups corn kernels, frozen
  • 1 liter water, or chicken broth
  • 1 tablespoon fresh cilantro, chopped
  • 2 cups whipping cream

  • Peel the potatoes and cut them into 1 cm cubes. Heat the oil in a large pot. Brown the bacon for 7 minutes.
  • Add the potatoes and corn to the pot with the bacon, cook for 5 minutes, until the juices have evaporated, stirring to prevent burning.
  • Add chicken broth or water, bring to a boil, then reduce the heat and cook for an additional 25 minutes, until the potatoes are cooked.
  • Add the cream to the soup and keep on the heat for 5 more minutes. Season with salt and pepper.
