Potato cream, with warmth of home

For those cold days when you want something warm, delicious, but simple to make, potato cream is a perfect option! It reminds me of my childhood, on those rainy and cold days. My mom made the cream as a main dish since she included serrano ham or chicken.

  • 2 cups potato, peeled and diced
  • 1 cup evaporated milk
  • 2 cups chicken broth
  • 4 tablespoons onion, chopped
  • 1/4 cups celery, chopped
  • 2 tablespoons flour
  • 1 sprig dry rosemary
  • 100 grams serrano ham
  • salt, to taste
  • 3 tablespoons butter
  • 1/4 cups table cream
  • pepper, to taste

  • Boil the potato cubes in water with a little salt. Remove and drain when they are cooked but still firm.
  • In a saucepan, melt the butter and sauté the celery and onion. Once the onion is translucent, turn off the heat.
  • Place the cooked potatoes, the sautéed mixture (onion and celery), chicken broth, evaporated milk, salt, pepper, and rosemary leaves in the blender. Blend.
  • Dissolve 2 tablespoons of cornstarch in a little water, add the cornstarch and cream to the blended mixture.
  • Bring the cream to a boil over medium-low heat, adjust seasoning, and stir constantly until it boils.
  • Serve hot with serrano ham.
