Pumpkin Cream with Granola

  • 1/2 cups Kellogg’S® granola ancestral grains; amaranth, flaxseed and blueberry
  • 1 1/2 cups zucchini, washed and sanitized
  • 1/2 onions
  • 2 cloves garlic
  • 1 cup canned corn kernels, yellow
  • 1/4 cups parsley, washed and sanitized
  • 1 cup soy milk
  • 1 1/2 cups chicken bullion
  • 1 tablespoon serrano chile
  • 1/2 cups leek, washed

  • Cut the pumpkin, onion, and leek into medium pieces. Cook them in a pot with oil until soft.
  • Transfer the vegetables to the blender and add fresh parsley, serrano chili, and chicken broth. Add Kellogg’s® Ancient Grains Granola; Amaranth, flaxseed, and cranberry.
  • Return the preparation to the pot, cover, and cook for 30 minutes over medium heat.
  • Add salt, pepper, and soy milk. Mix until everything is well incorporated and let cook for 10 more minutes.
  • Add the corn kernels and serve.
