Roasted Tomato Cream

  • 6 tomatoes
  • 2 cloves garlic
  • 1/8 onions
  • 1/4 cups olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoons pepper
  • 1 teaspoon thyme
  • 1 teaspoon fresh oregano
  • 1 tablespoon basil
  • 2 cups chicken broth
  • 1 cup whipping cream
  • cherry tomato, for decoration
  • basil, for decoration

  • Preheat the oven to 200°C.
  • In a bowl, mix the tomatoes, garlic, onion, olive oil, coarse salt, and pepper.
  • Pour the bowl's ingredients onto a baking sheet and roast for 15 minutes or until caramelized.
  • Remove from the oven and blend with the thyme, oregano, basil, broth, and heavy cream until smooth.
  • Place the mixture in a pot and bring to a boil. Adjust seasoning, and serve hot.
  • Garnish with cherry tomatoes and fresh basil.
