Roasted Tomato Cream

Do not forget to prepare this rich and consistent roasted tomato cream, which is made with chicken broth and spices like oregano and thyme that give it a lot of flavor. The roasted vegetables makes this cream something unique and the best thing is that it is served with cherry tomato and basil.

  • 6 tomatoes
  • 2 cloves garlic
  • 1/8 onions
  • 1/4 cups olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoons black pepper
  • 1 teaspoon thyme
  • 1 teaspoon fresh oregano
  • 1 tablespoon basil
  • 2 cups chicken soup
  • 1 cup whipping cream
  • to taste cherry tomato, to decorate
  • to taste basil, to decorate


Preheat the oven to 200 ° C.
In a bowl, mix the tomatoes, garlic, onion, olive oil, salt and pepper.
Pour the ingredients of the bowl into a tray and bake for 15 minutes or until roasted.
Remove from oven and blend with thyme, oregano, basil, broth and cream until smooth.
Place the mixture in a pot and let it boil. Rectify seasoning, and serve hot.
Garnish with cherry tomatoes and fresh basil.


Serve in a deep dish and decorate with croutons and fresh basil.


You can make the crotons yourself by cutting a piece of diced rolls and baking them for a couple of minutes.
