Traditional Mushroom Cream

  • 2 tablespoons unsalted butter
  • 1 clove garlic, chopped
  • 1/4 yellow onion, slice
  • 400 grams white button mushrooms, sliced
  • 30 milliliters brandy
  • 500 milliliters cow's milk
  • 250 milliliters whipping cream
  • 2 pinches pepper, ground
  • 20 grams salt
  • 1 baguette

  • Heat the butter and fry the garlic with the onion until translucent, add the mushrooms and cook for 10 minutes.
  • Add the brandy and heat for 3 minutes or until reduced, remove from heat and blend with the milk, whipping cream, salt, and pepper.
  • Return to heat and continue cooking for 10 minutes or until slightly thickened.
  • Cut the baguette into thin slices, bake, and serve with the cream.
