This delicious and economical lentil soup with chorizo is perfect for any day of the week to prepare for your family. It is very easy to make and yields quite a bit. We suggest eating it with banana; it will be a hit.

3 tomatoes, quartered, for the broth
1/4 onions, for the broth
1/3 cups fresh cilantro, for the broth
1/4 cups onion, chopped
1 teaspoon garlic, minced
1/2 cups chorizo, in slices
5 cups lentils, washed and soaked
6 cups water
2 tablespoons salt
banana, sliced for garnish
Preparation

Blend the tomato, onion, cilantro, and garlic.
In a pan, cook the onion, garlic, and chorizo until golden. Reserve some slices for garnish.
In a pot, cook the lentils with the water, tomato broth, chorizo, and salt, cover, and cook for 30 minutes until the lentils are tender. Season.
Serve the hot soup with the banana slices and the chorizo you reserved.
