Delicious Sopa Tarasca

  • 1/2 onions, cut into eighths
  • 1 clove garlic, cut into pieces
  • 2 tomatoes, cut into cubes
  • 1 cup beans, cooked
  • 1 cup chicken broth
  • 2 pasilla chiles, clean, soaked, and seedless
  • 2 cups chicken broth
  • 2 leaves dried bay
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • vegetable oil
  • 1 cup corn tortillas, cut into strips
  • 1/2 cups ancho chile, cut into thin strips
  • 1 teaspoon sour cream, for serving
  • 1 teaspoon queso fresco, crumbled, for serving
  • 2 slices avocado, for serving

  • Heat a griddle over high heat and roast the onion, garlic, and tomato. Remove.
  • Blend the ingredients you roasted earlier with the beans, bean broth, pasilla chili, chicken broth, bay leaf, thyme, and marjoram until you achieve a homogeneous mixture.
  • Heat a pan with a little oil and cook the previous preparation until it is done.
  • Heat a pan over medium heat with the oil, fry the tortilla strips until crispy, remove from the oil and place on absorbent paper. Fry the strips of ancho chili without burning them, repeat the same process and set aside.
  • In a deep plate, serve the soup, accompanied by sour cream, fried tortilla strips, fried ancho chili, fresh cheese, and avocado. Enjoy.
